No Bake Peanut Butter Chocolate Protein Bars

Being a personal trainer keeps me up and moving on my feet all word day long. All the activity and high energy gets me HUNGRY. I often need to eat something quickly between clients to keep me going! Protein bars are great for this. I wanted to come up with my own protein bar recipe for fun. And man, these protein bars are delicious, satisfying, and OH- SO- GOOD- FOR- YOU!

No Bake Peanut Butter Chocolate Protein Bars

5 tbsp natural peanut butter (chunky or smooth)
1 cup dry oat meal
6 scoops chocolate protein powder
1 teaspoon vanilla
1/8 cup (2 tablespoons) flax seeds
1 cup non-fat dry milk
3/4 cup water (depending on what type of protein you use, you may need to add more or less)

Combine dry ingredients in a medium sized bowl and mix well. Then add peanut butter and mix – the mixture will be crumbly and dry. Then lastly, add water and vanilla. It should look like this:


Using a wooden spoon or rubber spatula, mix everything until a dough forms as seen above. The dough will be sticky. Spray an 8×8 pan with non-stick cooking spray. Spread the dough out evenly using CLEAN HANDS as seen below:

Refrigerate a few hours (or freeze for an hour) and cut into 9 squares. Keep refrigerated.

Each bar contains:

200 calories, 21 g protein, 8 g fat, 14 g carbohydrate, 2 g fiber

Applesauce Chocolate Chip Cookies

I am a big sweets girl ! I can guarantee I LOVE desserts MORE than you do ! =)

Keeping my sweet tooth in check can be challenging, but I find new and creative ways all the time. I make a point to not be obsessed with eating healthy. It is important for me to have cheats and to enjoy the “sweets” of life.

I really really really like cookies. I love the dough. I like them half -baked, all baked, burnt, frozen, and any other way you can imagine them.

There are ALOT of healthy cookie recipes out there, but so many of them taste like horse food honestly. YET, so many recipes have unnecessary amounts of sugar and butter and I don’t want that either.

In order to find the perfect cookie that is both “healthier” and delicious, I had to come up with my own recipe. I think I came up with a good recipe that “honored” how a cookie SHOULD taste, but yet reduced the sugar and butter drastically.

And wow, you guys… I think I stumbled unto something.

Applesauce Chocolate Chip Cookies

Here is the recipe:

1/4 cup butter

1/2 cup of unsweetened apple sauce

1 egg

1 TBSP of vanilla

1/2 cup of brown sugar

6 packets(which is 3 tsp) of stevia

1 1/3 cup of 100% whole wheat flour

3/4 tsp salt

1 1/2 tsp of baking powder

1 cup of chocolate chips

The dough should look like this

Cook on 350 for 10 minutes. They may not LOOK done, but they will be after ten minutes. They don’t grow as much as other cookies, but you can tell by the touch that they are done.

Each cookie has:

105 calories

6 grams of sugar

1 gram of protein

2 grams of fat

WHAT!!!????!!??? That’s pretty remarkable! And best of all, they actually TASTE LIKE A COOKIE. SCORE!

Just remember, practice moderation.
